our journey
I started my career in Hospitality 20 years ago, cutting my teeth as a cocktail bartender for a well known Mexican restaurant. After expanding my skills and knowledge and becoming Bar Supervisor, for one of the busiest venues in the company, I had the opportunity to be trained by World Champion bartender Andy Pearson. I jumped at the chance and took on the role of Area Bar Manager, which involved managing and training the team for 12 restaurants across the North West. It was during this time, that after holding a cocktail competition at Leicester Square I visited “The Big Easy” and discovered my love for smoked meats!
After my time here was over I worked in various Restaurants and Hotels and developed my knowledge for all aspects of hospitality and became a General Manager for Deadwood Smokehouse after lockdown in the summer of 2021. Working here we won several awards, most notably winning Restaurant of the year for 2022 for the entirety of Wales!
When I heard that the previous owners of Deadwood were selling in summer 2023, I made the (brave) decision to take over and dove into it head first. Putting all my years of experience, dedication and passion for delivering an excellent dining experience to the test and adding to the already great Deadwood legacy.
